Cardamom Sago Pudding
Atul Kochhar whips up a delicious dessert using sago pearls and fresh mango

INGREDIENTS


200 g sago pearls 
500 ml whole milk 
60 g sugar 
6 green cardamom 
50 g golden raisins, soaked in water for until puffed up 
1 fresh mango, sliced

METHOD


  1. Soak the sago in warm water for 5–7 minutes, until soft.
  2. Heat the milk and sugar over a low heat, stirring, until the sugar dissolves.
  3. Add the cardamom and soaked sago and simmer for 15-20 minutes. Check the sweetness and add more sugar if needed. Add the raisins just before serving.
  4. Can be served hot or cold with sliced mango.
