Atul Kochhar whips up a delicious dessert using sago pearls and fresh mango
Cook Time: 40 minutes
Serves: 4 people
200 g sago pearls
500 ml whole milk
60 g sugar
6 green cardamom
50 g golden raisins, soaked in water for until puffed up
1 fresh mango, sliced
All ingredients available ta Foodhall stores
- Soak the sago in warm water for 5–7 minutes, until soft.
- Heat the milk and sugar over a low heat, stirring, until the sugar dissolves.
- Add the cardamom and soaked sago and simmer for 15-20 minutes. Check the sweetness and add more sugar if needed. Add the raisins just before serving.
- Can be served hot or cold with sliced mango.
