Chicken Courgette
For your next house party try Adria Wu's special Chicken Courgette recipe.
Cook Time: 40 minutes + 20 minutes in the oven

Serves: 4-5 people

INGREDIENTS


160 g couscous
300 ml water, 
 1 tbsp olive oil,
1 bell pepper, chopped
400 g or 1 can tomatoes, chopped 
400 g chicken mince 
1 courgette, grated
2 stalks spring onion, sliced
50 g fresh herbs like basil and oregano (reserve some for couscous)
2 cloves garlic, diced
½ cumin
1/4 tsp chilli flakes 
½ paprika, 
½ tbsp salt, for meatball mix
1/4 tsp pepper, for meatball mix
Salt and pepper to taste

 

METHOD


  1. Soak couscous in water (does not need to be hot) for 15 mins until all water is absorbed. Add olive oil and a few pinches of salt and pepper to taste. 
  2. Mix bell peppers and chopped tomatoes in a bowl. 
  3. In a separate bowl, combine the chicken mince with the remaining ingredients and make golf-ball sized meatballs (should make about 10-12).
    In a large pan, place the meatballs in the tomato sauce (they should not be entirely underneath the sauce) and cook for 20 minutes in the oven at 180 degrees C.
  4. Take out of the oven and serve with crusty bread.
