This is a truly decadent dessert that will bring the perfect ending to any dinner party. Each guest will only need a small portion as the richness of the thick chocolate will satisfy quickly.
Cook Time: 25 minutes
Serves: 2-3 people
300 ml single cream
200 g dark chocolate
2 large egg yolks, lightly beaten
60 ml Amaretto, Bailey’s or Kahlua liqueur
25 g butter
- In a medium heavy-based saucepan, bring the cream to nearly boiling point. Make sure you watch for the beginning of bubbles developing under the surface of the cream. Remove from heat just before the bubbles begin to break the surface.
- Set aside for 1 minute before stirring in the chocolate. Once the chocolate has melted, beat in your egg yolks and liqueur and stir until smooth.
- Allow to cool slightly. Stir in the butter until the mixture is perfectly smooth. Pour into individual serving pots and place in the refrigerator to cool.
- To serve, crumble some almond biscuits over the top of each pot or simply serve as is.
