Granola Yoghurt Popsicles
A treat so nice, you'd want to make and eat it more than twice.

Serves: Makes 5 popsicles

INGREDIENTS


½ cup rolled oats
5 tbsp honey
¼ cup assorted nuts of your choice, roughly chopped
2 tbsp raisins
1 tbsp oil
Pinch of salt
500g yoghurt
1½ cup fruits of your choice, chopped

METHOD


  1. To make the granola, add rolled oats in a mixing bowl with 2 tablespoons of honey, nuts, oil and salt. Give it a mix and layer it in a baking sheet. Bake at 60 degrees C for about 50 minutes, tossing every 15 minutes, until the colour changes to golden brown.
  2. Pour yoghurt and 3 tablespoons of honey in a bowl and whisk. Taste and add more honey or sugar, if you prefer it sweeter.
  3. In a popsicle mould, pour a spoon of yoghurt followed by a layer of chopped fruits, then more yoghurt, some more fruits and finally, add some granola on top. Fill all the popsicle moulds in the same order and allow it to freeze for a few hours.

    Notes: You can make the granola in advance and store in an airtight jar. The granola tastes great as is on some yoghurt or milk as well.
