INGREDIENTS
250 g pecan nut
75 g caster sugar
1 tbsp water
1 tbsp honey
1 tsp Unsalted butter
All ingredients are available at Foodhall stores
METHOD
- Roast the pecan in the oven for a few minutes at 170 degree C.
- In a medium sauce pan, place the caster sugar and water together and bring to the boil over medium heat; heat to 110 degree C-115 degree C.
- Remove from the heat, add the roasted pecan and stir until the sugar starts to crystalize. At that point add the honey, and return the pan to a medium heat until the sugar starts melting and caramelize; all the while stirring gently.
- Remove from the heat, add the butter, mix until all dissolve and pour over a cold tray; separate while still hot and let to cool down.
