INGREDIENTS


250 g pecan nut 
75 g caster sugar 
1 tbsp water
1 tbsp honey 
1 tsp Unsalted butter

METHOD


  1. Roast the pecan in the oven for a few minutes at 170 degree C.
  2. In a medium sauce pan, place the caster sugar and water together and bring to the boil over medium heat; heat to 110 degree C-115 degree C.
  3. Remove from the heat, add the roasted pecan and stir until the sugar starts to crystalize. At that point add the honey, and return the pan to a medium heat until the sugar starts melting and caramelize; all the while stirring gently.
  4. Remove from the heat, add the butter, mix until all dissolve and pour over a cold tray; separate while still hot and let to cool down.
