Kale, washed and roughly chopped ; 1 cup
Granny smith apples, thinly sliced; ½ cup
Almonds, slivered ; 1-2 tbsp
Dates, chopped; 1 tbsp
Pecorino cheese; 1-2 tbsp
Lemon juice; 2 tbsp
Honey; ½ tsp
Garlic, crushed; ½ tsp
Mustard; 1 tsp
Extra Virgin Olive Oil; ¼ cup
Salt & pepper; to taste
- Toss the Kale, apple and dates together and chill.
- For the dressing – mix well, all ingredients except oil. Slowly mix in the oil until emulsified.
- Just before serving, mix dressing into the salad, top with slivered almonds and pecorino cheese.
