Saffron Quinoa Porridge

Serves: 2-3 people

INGREDIENTS


50 g quinoa
250 ml water
200 ml almond milk, or other
Saffron, few strands
5 cashews, roasted
3 dates, chopped
2 tsp agave or honey, optional
Cardamom to taste

METHOD


  1. Boil the quinoa for 20-30 minutes on low heat until all the water has been soaked up. Add a little extra water so that the quinoa becomes super soft.  
  2. Once cooked, add the almond milk, saffron and cardamom and stir on low heat for around 5 minutes.
  3. Now add the dates, cashews and honey before you serve.
