Seafood Ceviche
Quick and easy to make, the seafood ceviche will keep your guests entertained. Amrita Rana shares a quick recipe.

Serves: 2 people

INGREDIENTS


100 g Smoked Salmon, finely chopped
100 g baby prawns, deveined & finely chopped
1 small onion, finely chopped
1 tbsp chopped bell pepper
Handful of coriander leaves
Juice of two lemon
1 tsp olive oil
1 tsp salt
1 fresh red chilli
1 avocado, peel, discard seed & finely chopped

METHOD


  1. Toss the seafood with fresh lime juice, cover and refrigerate for at least 3-4 hours or until the meat has lost its transparency and becomes opaque. Mix it several times.
  2. Add the salt, red chillies, olive oil, onions, peppers and fresh coriander and refrigerate for another hour. Add chopped avocado at last.
  3. Mix and chill for another 15 minutes before serving.
