350 g butter
200 g demerara sugar, brown sugar
500 g maida (all purpose flour)
15 g baking soda
7 g baking powder
20 g cinnamon, dalchini powder
Caster sugar to taste
I. In a mixing bowl, beat sugar and butter together till light and fluffy.
II. Add sifted flour, baking powder and soda, and cinnamon, and mix well.
III. Make 12-15 rounds of approximately the same size, flatten, and then roll in the cinnamon sugar.
IV. Line a baking tray with either parchment paper or butter paper and bake in a pre-heated oven at 180 degrees for 12-15 minutes, until lightly browned.
