Strawberry Blue Cheese Tart
Strawberry and blue cheese match up to create one beautiful tart. Amrita Rana shares a recipe.

INGREDIENTS


50 g puff pastry
8-10 strawberries, sliced
2 tbsp cream cheese, softened
1 tbsp blue cheese, crumbled
1 tbsp milk
3-4 tbsp strawberry puree
2 tbsp balsamic vinegar
Microgreens for garnish.

 

METHOD


  1. Preheat the oven to 200 degrees C.
  2. Roll out the thawed puff pastry on a floured surface. Smear cream cheese leaving an inch around edges. Layer on strawberry slices. Crumble some blue cheese and transfer to a baking sheet. Brush little milk on the edges of the pastry. Bake for 10-15 min or until the pastry rises and gets a golden hue on it. 
  3. Meanwhile, cook the strawberry puree in saucepan on medium heat for 2 min. Add balsamic vinegar and cook on slow flame until this strawberry balsamic glaze is nicely thickened. Set it aside to cool.
  4. To serve, drizzle the strawberry balsamic glaze over it and garnish with fresh microgreens.
