

Strawberry and blue cheese match up to create one beautiful tart. Amrita Rana shares a recipe.

INGREDIENTS
50 g puff pastry
8-10 strawberries, sliced
2 tbsp cream cheese, softened
1 tbsp blue cheese, crumbled
1 tbsp milk
3-4 tbsp strawberry puree
2 tbsp balsamic vinegar
Microgreens for garnish.
METHOD
- Preheat the oven to 200 degrees C.
- Roll out the thawed puff pastry on a floured surface. Smear cream cheese leaving an inch around edges. Layer on strawberry slices. Crumble some blue cheese and transfer to a baking sheet. Brush little milk on the edges of the pastry. Bake for 10-15 min or until the pastry rises and gets a golden hue on it.
- Meanwhile, cook the strawberry puree in saucepan on medium heat for 2 min. Add balsamic vinegar and cook on slow flame until this strawberry balsamic glaze is nicely thickened. Set it aside to cool.
- To serve, drizzle the strawberry balsamic glaze over it and garnish with fresh microgreens.
