A healthy, fruit based dessert for those weekend cravings!

INGREDIENTS


Strawberries, hulled; 500g

Sugar; 50g

Almond, ground; 25g

Truffle Oil; to drizzle

Instant oats; 100g

Baking powder; 1 tsp

Butter, cold, diced; 75g

Almond flakes; 100g

Cinnamon powder; 1 tsp

Demerara sugar; 75g

METHOD


  1. Put strawberries (stem & green leaves removed) into a pie dish, sprinkle sugar and ground almond with a drizzle of truffle oil. Give the dish a good shake to mix all the ingredients.
  2. For the crumble topping; put instant oats and 1 tsp baking powder in a mixing bowl and rub in cold, diced butter between your thumb and fingers. It should resemble a rough, pale oatmeal. Stir in the almond flakes and 1tsp cinnamon powder and demerara sugar with a fork.
  3. Tip this over the strawberry mixture, covering the strawberries in an even layer and giving a bit of a press in at the edges of the dish.
  4. Set the dish on a baking sheet and bake in a preheated oven at 200 degrees C for 30 minutes, cook till the crumble topping turns pale gold and some pink-red juices are seeping and bubbling out at the edges.
  5. Serve warm.
