½ ripe watermelon
4 yellow heirloom tomatoes
a bunch of radish microgreens
a bunch of red amaranthus microgreens
For the classic vinaigrette dressing
2 tbsp white wine vinegar
2 tbsp Dijon mustard
½ tbsp kosher salt
½ cup pure olive oil
Bell peppers to garnish
- Cut the watermelon into roundels and keep aside. Slice the yellow tomatoes thinly and keep aside.
For the dressing:
- Take a mixing bowl and whisk together all the ingredients. Adjust the seasoning as per taste
- Arrange the pieces of watermelon and tomatoes on a plate, align them in a way that the colour pop.
- Pour the vinaigrette dressing, and garnish with micro greens.
