Zucchini

Much like a cucumber, Zucchini, enjoys its popularity in salads and sandwiches and Asian cuisine. adding a sweet freshness . Its sweet refreshing flavours flavour make Zucchini an ideal snack on its own or spiralise zucchini and toss it with pesto sauce to enjoy a vegan meal.

Selection
When purchasing zucchini, look for ones that are heavy for their size and have shiny, unblemished rinds. Additionally, the rinds should not be very hard since this indicates that they are over-mature and will have hard seeds and stringy flesh. Buy it in average size since those that are overly large may be fibrous, while those that are overly small may be inferior in flavour.
Storage
It should be stored unwashed in an air-tight container in the refrigerator, where it will keep for about seven days.
